I know it doesn’t seem like it, but summer is slowly creeping up on us and you might be trying to lose a couple pounds. This is a healthy yet filling soup which is super easy to make. Keep any leftovers in the fridge for a few days or even in the freezer.

Serves: 2-3 of you

Prep time: 15 minute            Cooking time: 3o mins           

What you will need:

  • Medium saucepan
  • Large knife
  • Potato peeler
  • Fork
  • Wooden or plastic spoon


  • 2 chicken breasts
  • 500ml freshly boiled water
  • 1 leek (chopped)
  • 1 onion (chopped)
  • 1 large or 2 small carrots (chopped)
  • 1 potato (chopped)
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Let’s go…

  1. Cut each breast into 3 pieces. This makes it easier to cook
  2. Place the saucepan over a medium heat and add chicken, salt and boiled water. Cover and leave for 15 minutes
  3. While the chicken is boiling, prepare all the veg (leek: remove and don’t use the first two layers because they usually trap dirt. Only use the green half. The white half is not as nice)
  4. Once 15 minutes has passed, use a fork to remove the chicken breasts from the water
  5. Add the veg and black pepper to the saucepan, then cover and leave for 10 minutes
  6. Using a fork, pull the chicken apart to make into smaller pieces
  7. Once 10 minutes has passed, add the chicken back into the saucepan and cover for 5 more minutes

Feel free to add more salt, pepper or any other seasoning you like. This is just a basic recipe to which anyone can amend.
