We love experimenting with oats and peanut butter and when you put them together they taste delicious. Who doesn’t love peanut butter and jelly?! These oat bars make the perfect afternoon snack and your friends will definitely be going back for more. 

In the recipe below we decided to experiment and make our own chia seed jam. If you don’t want to make your own jam then you can just use shop-bought jam, which can be pretty cheap and will taste just as delicious.

Mixed Berry Chia Seed Jam Ingredients
375g frozen berries (you could use strawberries or plums instead)
3tbsp Water
3 1/2 tbsp Chia Seeds
2 tbsp Lemon juice
2 tbps Maple Syrup

Oat Bar Ingredients
2 ripe bananas
225g Peanut butter (we used the “nowt but nuts”)
135ml Milk or Almond Milk
325g rolled oats


  1. Line a medium baking tray with grease proof paper and pre-heat the oven to 180oc
  2. Put the fruit and water in a medium sized saucepan
  3. Set over a high heat and bring to boil
  4. Turn the heat to a medium heat and let the fruit simmer for 5-10 minutes
  5. Whilst the fruit is simmering mash the bananas in a large mixing bowl and then
    add the peanut butter and milk to the bananas and stir
  6. Once combined, add the oats and mix ingredients together
  7. Pour half of the mixture into the baking tray and bake in the oven for 15-20 minutes.
  8. Remove the jam from the heat and add the Chia Seeds, Lemon juice and Maple syrup
    stir the ingredients together and let sit for 15-20 minute
  9. Take the mixture out of the oven and spread the Chia jam on top
  10. Place the remaining oat mix on top and place back in the oven for 20 minutes until golden brown
  11. Enjoy with a cup of tea as an afternoon snack!
