Snacks are essential to keep hunger at bay, especially on those days when you’re in uni 9-5 and have multiple breaks in between lectures and seminars. The spicy seeds recipe and cookie dough balls are perfect for packing in a little Tupperware box and keeping in your bag for the day.

Kale crisps

Please don’t let the name of this snack fool you, kale crisps aren’t crisps as you know them … in fact, this snack is more just crispy kale! Its nutritious, simple to make, very cheap and very tasty so your welcome!

First preheat your oven to 200c/gas mark 6. Place kale on a baking tray and drizzle 1tbsp of olive oil and sprinkle with salt. Massage the oil and salt into the kale covered (yes, I meant to say massage – in want of a better word)! Try to ensure that all the kale is covered in kale, if not just add a little more. Make sure the kale is evenly spread evenly over the baking tray and place in the oven for 10 minutes or until crispy!

Ingredients: 200g bag of Kale, 1tbsp of olive oil, sprinkle of salt

Spicy seeds

The great thing about these spicy seeds are that you can make a big batch of eat them bit by bit throughout the week. They are perfect for lecture munching! Place the pumpkin seeds, sunflower seeds and sesame seeds on a baking tray. Drizzle olive oil and sprinkle spices over the seeds and then mix until they are evenly covered. Bake in the oven at 180c for 10 minutes.

I haven’t specified measures in this recipe because to be honest anything goes! If you want to make a big batch, then use a lot of seeds. If you want them to be spicy, use a lot of chilli powder alternatively if you’d like them to be a little sweeter use smoked paprika. See below for the combination I used.

Ingredients: 1 cup of pumpkin, sunflower and sesame seeds, 2tbsp oil, 1tbsp of chilli powder, cumin and turmeric

Cookie dough balls

I love these! Cashew nuts are 100% my favourite nut so I think that plays a huge part in why I make these so much. Grind 2 cups of cashew nuts in a food processor or blender. Then grind with 1 cup of oats. Add 3tbsps of maple syrup and 2tbsps of vanilla essence and process into a dough.

Place the dough in a mixing bowl, add the chocolate chips and roll into mini dough balls!

Ingredients: 2 cups cashew nuts, 1 cup oats, 2 tbsps maple syrup, 2 tbsps vanilla essence
